With all the typicity of a classic variety in the history of Rioja
Made from very ripe Graciano grapes, selected from sun-drenched vineyards on the left bank of the river Ebro. Fermentation takes place smoothly and gradually at a controlled temperature of 28ºC. Maceration continues for a little over three weeks, with various rack and return operations “délestage” and pumping over from time to time. After racking off, the wine is transferred to new oak casks made from fine-grained wood from central France and medium-grain Missouri oak. Malolactic fermentation takes place at an ambient temperature of 17ºC for eight days. Subsequently, the casks are racked and the wine returned to the barrels after washing them. The wine is then racked twice more, after three and seven months.
In appearance the wine has a lively, very intense cherry colour. There are iodine-purple hues in the fine top layer. The typicity of this grape can be identified in the characteristic balsamic aromas of mint or aniseed, accompanied by ripe fruit and hints of flower blossom. The aroma wheel is completed with toffee and coffee nuances coming through. On the palate it is outstanding in its richness, well-supported by the clear acidity which with time becomes well-integrated. This wine is long in its sensations and in its evolution over the next three or four years.
