Tempranillo and Mazuelo grapes from selected low-yielding vines in Viana picked when overripe.
Vatted for three weeks and fermented at between 25ºC and 28ºC, with daily pumping over and “délestage” (rack and return). Malolactic breakdown in new oak casks made from wood from Missouri and Central France, followed by ageing on the lees until racking.
The wine has spent twenty months in casks made from oak from Missouri and Central France, with regular racking.
Deep cherry red with inky hues, a complex “bouquet” of fruity aromas, spices and smoky aromas on the nose. In the mouth it has backbone and lots of concentration, which bodes well for a long life.
This wine was bottled without prior tartaric stabilisation, so it may contain precipitated solids, which, in no way affect its organoleptic characteristics. In this case it is recommended that the wine be decanted before drinking.
